English Peas with a Hint of Mint

UNITED KINGDOM MAKES ABOUT 1 CUP

1 green onion, trimmed and chopped

1 teaspoon olive oil

1 cup fresh English peas or frozen petite peas

3 fresh mint leaves, washed and minced, or pinch dried mint

In a 1-quart saucepan over medium-low heat, sauté onions and oil for 3 to 5 minutes. Add peas, mint, and 3 tablespoons water. Cover and steam for about 3 minutes. Let cool.

Puree in a mini food processor until smooth and serve.

English peas, also known as garden peas, appear for a short time, usually late spring and early summer. They are sweet and tender, making them a baby favorite. Mint makes them even more flavorful.
